Hot Fudge Pudding Cake
This is a warm, sweet, and very chocolatey dessert that you can make in the oven or in a crock pot!
1 1/4 c. flour
1 1/2 c. sugar, divided
1/2 c. cocoa, divided
2 tsp. baking powder
1/2 tsp. salt
3/4 c. milk
3 Tbs. butter melted
1 1/2 tsp. vanilla, divided
1/2 c. semi-sweet chocolate chips
1 3/4 c. boiling water
1 Tbs. powdered sugar
Preheat oven to 350 degrees. Combine flour, 3/4 c. sugar, 1/4 c. cocoa, baking powder, and salt. Add milk, butter, and 1/2 tsp. vanilla; stir until smooth. Stir in chocolate chips and spread evenly in an 8x8 baking dish.
In another bowl whisk together remaining 3/4 c. sugar, and 1/4 c. cocoa; gradually stir in boiling water and remaining 1 tsp. vanilla. Carefully pour evenly over batter.
Bake 30-35 minutes or until toothpick inserted in the center comes out clean. Cool 15 minutes and sprinkle with powdered sugar. Spoon into dessert dishes using the pudding in the bottom to go over top of the ice cream!
I also like to make this in the crockpot. One recipe works well in a small crockpot otherwise you may want to double it. Make it as directed except for putting the batter and water/cocoa mixture in your crockpot and baking on high for 2-2 1/2 hours.
