3 C. shredded Zucchini
1 C. Bisquick
1/2 C. finely chopped onion
1/2 C. freshly grated Parmesan cheese
2 T. parsley (fresh or dry)
1/2 t. salt
1/2 dried oregano
1/8 t. pepper
1 minced garlic clove
1/2 c. vegetable oil
2 eggs slightly beaten
Mix ingredients together in a large bowl. Grease a 9 x 13 or a 10 x 15 if you want them thinner. Bake at 350 for 30 minutes or until golden brown. A toothpick inserted in the middle should come out clean. These taste great dipped in marinara sauce.
**I think this recipe still needs to be tweaked a little bit to be perfect. I love the way these taste but they are a bit too gooey if done in a 9 x 13 (it tastes more like a quiche). I will try to perfect the recipe and let you know! Or you can try them out and let me know. They are a great way to get rid of some that overly abundant zucchini!
