2 cans cheddar cheese soup*
1 cup water
2 cups salsa
1 1/4 cups uncooked long grain rice
2 pounds uncooked chicken- cubed**
Combine all ingridients in a crockpot and cook on low for 7-8 hours. You can also put it in a casserole dish covered with foil and bake at 350 for about 1-2 hrs- just keep checking it.
You can wrap in tortilla shells, put on chips for a taco salad or serve as a side. Garnish with toppings for choice: cheese, sour cream, tomatoes, avocados, olives, lettuce etc.
*I make my own cheddar cheese soup: (this is 2 cans worth)
melt 1 cube butter, whisk in 4 TBS cornstarch or flour
Let thicken over medium heat. Then add 1-2 cups sharp cheddar cheese- shredded
salt and pepper to taste.
** I use a whole ( white meat only) precooked chicken from sams club- so easy, just cut into bites size pieces
