Baked Potato Salad



5 lbs red or russet potatoes

1-2 bunches of green onions(optional)

1 pint sour cream (2 cups)

1 package ranch dressing mix

1 package cream chees(softened)

1-2 pds of cooked crumbled bacon


Cut potatoes into dime sized cubes and boil til cooked but firm, drain and lay out on cookie sheet. Put in fridge to cool. Blend sour cream and cream cheese with ranch dressing and set aside. Chop 1 bunch of green onions and blend into sour cream mixture, also add half the cooked, crumbled bacon to mix. Carefully mix potoes with cream cheese mix until evenly coated then chill for 15 mins. Now top with grated cheese, the other bunch of onions and the other half of crumbled bacon.
