2 pounds baby carrots2 tablespoons olive oil
3 tablespoons honey
1 teaspoon balsamic vinegar
Roast 2 pounds of baby carrots in the oven at 400 degrees for about 20 minutes with some seasoning and a little olive oil. Pull out of the oven and drizzled with olive oil, honey, balsamic vinegar. Pop them back into the oven for about 5 more minutes.
*I doubled this recipe and I cooked them until they were soft
