Cashew Pork
*1 1/2 lb pork (cubed)
*3 tbsp cornstarch
*minced garlic
*crushed red peppers
*2 large carrots (peeled and sliced thin)
*3 tbsp soy sauce
*2 tbsp olive oil
*1 large green pepper
*1 onion cut in wedges
*pepper (to taste)
*1/4 c -1/2 cashews
Combine cornstarch, pork, and soy sauce in a Ziplock bag. Toss to coat. Let sit for one hour. When ready- Heat oil. Add carrots, pork, onion, pepper, and spices to taste. add cashews as meat browns. Cook until crisp tender.
