Crustini
Slice a baguette. Toast the baguettes on both sides under the broiler.
Pesto
Add the following to a food processor:
3 cloves of garlic
pinch of salt and pepper
1/3 c. pine nuts
3/4 c. fresh grated parmesan cheese
3 c. basil (I stuffed my food processor full)
Pulse the food processor until chopped.
Add 1/2 to 3/4 c. of olive oil as the food processor is running until you reach the consistency you desire.
Bruschetta
2 chopped tomatoes
1 Tbs red wine vinegar
1 Tbs olive oil
1/4 c. chopped basil
3 to 4 finely chopped green onions.
Toss all ingredients together.
Spread pesto on crustini, top with bruschetta and serve immediately.
